With a fork, finely mash the cheese and egg. Wash the kitchen herbs, shake dry and finely chop them. Mix with the cheese. Add mint and remix everything well.
Unfold the round Yufka pastry sheets and cut them in eighths with a sharp knife. Lay the pastry triangles so that the rounded end faces toward you. With a small spoon, put the filling onto the rounded end. Fold in the sides so that the filling cannot come out. Then slowly form it into a thin roll and moisten the pointed end with water so it sticks.
Heat plenty of oil in a pan. Fry the rolls in it for approx. 3-4 minutes until golden brown. Drain the rolls on paper towels and serve hot.
Yufka pastry sheets can be found in almost all Turkish supermarkets and in many speciality stores.
