Halloumi – cheese for pan and grill, is a typical cheese speciality from Cyprus with 43 % fat i.d.m. Part of the elaborate and typical production procedure is that the cheese is strewn with salt and mint. Thanks to its special and firm texture, the cheese can be prepared in many ways and retains its form, even when heated. It can be fried, baked and grilled, for example. It offers a terrific alternative to meat. Halloumi is made in Cyprus in the traditional way from cow's and sheep's milk.
