Ingredients for 4 servings
2 large sweet potatoes 2 handfuls of baby spinach 1 tbsp olive oil 1 clove of garlic, crushed Salt and freshly ground black pepper 4 tortillas 200 g GAZİ cream cheese, refined with yogurt ½ TL Chiliflocken ½ tsp chili flakes ½ tsp cumin 1 tsp roasted peppers (pimentón de la vera)
1. Cook the sweet potatoes unpeeled for 20 minutes in a saucepan of boiling water. Drain and set aside to cool. When cool to the touch, peel them and cut into cubes. Wash and spin dry the baby spinach.
2. Heat 1 tbsp of oil in a deep, straight-walled pan. Add the garlic and the potato cubes and fry on medium heat for 5-10 minutes. Season with salt and pepper.
3. Spread out the tortillas. Spread 50 g GAZİ Sürme fresh cheese on each, add the roasted sweet potato cubes and baby spinach, and sprinkle with the spices.
4. Fold the lower quarter up. Then fold over one and then the other side.
