1. Mix the ground hazelnuts with the flour. Add the cold GAZİ butter and the egg yolk. Quickly knead into a smooth dough using a dough hook or your hands. Wrap the dough in cling film and refrigerate for at least 30 minutes.
2. Preheat oven to 190°C. Dust the work surface with flour and roll out the dough. Form into small circles, stars or similar shapes using a cookie cutter. Bake on a baking tray with baking paper for about 8-10 minutes until golden brown. Let cool, then remove from the baking tray.
3. For the filling, mince the dill and mix with the GAZİ Taze Peynir. Season to taste with salt and pepper. Using a small piping bag, spread the mixture onto half of the biscuits. Top with the remaining biscuits. Garnish with dill.
