Ingredients for 1 Aubergine
150 g GAZİ sheep cheese 1 red chilli pepper 1 clove garlic 0,5 tsp dried oregano 0,5 tsp dried thyme 1 tbsp dried rosemary 5 tbsp olive oil salt and pepper 1 aubergine (about 500g) 2 tomatoes (about 400g) fresh herbs
TIP: The aubergines are best prepared on a grill mat so nothing can fall through the grill.
1. Clean chilli and remove seeds. Peel garlic. Finely mince chilli and garlic. Mix with herbs, 4 tablespoons of oil, a little salt and pepper and let sit for 30-60 minutes. Clean tomatoes and cut into thin slices.
2. Wash the aubergine and cut lengthwise into strips about 1 cm thick, so that they still hang together at the stem end. Brush with the previously prepared oil and grill on a hot grill for 3 minutes on each side, brushing with oil 1-2 times. In the last 3 minutes spread the tomato slices on one side and crumble the sheep cheese over the tomatoes.
3. Season well with salt and pepper and sprinkle with a little fresh herbs.
